Make things like stew, soup or chilli in large quantities and freeze individual portions for later.

More importantly, learn to embrace/enjoy cooking. I love taking half an hour to unwind and cook something really fresh and tasty (and I'm a student). I'd recommend Jamie Oliver's website for recipe inspiration...
