I highly recommend The Art of Fermentation[1] to anyone interested in making this and other fermented food and drinks. It's a huge, encyclopedic book on everything fermentation-related.
The following book, the first 3 chapers explores the bio chemistry of the microbes. Citing research not as much as the other book I recommended, but has a solid base to understand your gut bacterium.
